Don Dominguez is a Leading Authority in the coffee industry, Premier Roastmaster and Merchant of the Highest Quality Coffees, Goods and Services.  His fluent Spanish strengthens his relationships with coffee brokers, growers and customers worldwide.


On Cupping
 
One of Don’s favorite aspects of the coffee business is “cupping,” and he is considered one of the best in the business by industry professionals.


“Cupping is the most fun, because you never know exactly what’s going to come out of the cup.”
 
The true purpose of cupping is to select the right beans.  Cupping is all about smelling aromas and identifying with flavors to select premium beans or to craft the perfect blend.


“The cupping process is the beginning of quality control. It’s really the epicenter of our business.”
 
If you’re interested in coffee for your business, Don will lead you through the cupping process in a specially designed room around a custom table that spins like a giant Lazy Susan.  Sit back and enjoy the ride.  You’re in for a real treat!



Variances in Beans
 
One of the reasons Don loves cupping is you never know what you’re going to get from year to year, origin to origin, plantation to plantation, or crop to crop.

Not everyone has the passion, patience, or pallet for cupping.

Coffee Q Grader
 
Don Dominguez is among the first 100 coffee roasters in the United States to become a Certified Coffee Q Grader, the only professional accreditation in the industry for cuppers. 


“It’s considered the Ultimate Prestige.” 
 
To achieve certification, Dominguez endured a series of sensory tests to discern brewed coffees from each major coffee growing region by smell and taste, and grade coffee according to established criteria. The certification process takes place over three days of cupping more than 300 cups.  The process is rigorous and not all roasters are up for the challenge.
